Vadym Samoilenko 15bf9d3935 feat: add full AI provider config to .env.example and docker-compose 
- All OpenAI, Gemini, Anthropic model/timeout/temperature settings
- Brief extraction processing config (models, cost limits, concurrency)
- File upload and WebSocket settings
